### Ingredients:

- 1 1/2 lbs boneless chicken thighs, cut into bite-sized pieces

- 2 cans (13.5 oz each) coconut milk

- 1/2 cup Massaman curry paste

- 2 large potatoes, peeled and cubed

- 1 large onion, sliced

- 1/2 cup roasted peanuts

- 3 tbsp fish sauce

- 2 tbsp palm sugar

- 1 cinnamon stick

- 3 cardamom pods

- 3 bay leaves


### Instructions:

1. In a large pot, heat a portion of the coconut milk over medium heat until it thickens.

2. Add the curry paste and cook until fragrant.

3. Add the chicken and cook until it browns.

4. Pour in the rest of the coconut milk and bring to a simmer.

5. Add potatoes, onion, cinnamon stick, cardamom pods, and bay leaves. Cook until the chicken is tender.

6. Season with fish sauce and palm sugar.

7. Stir in the roasted peanuts.

8. Serve hot over steamed rice.
