Cream Cheese Cranberry Loaf

Ingredients:

- 1 cup of all-purpose flour

- 1/2 teaspoon of baking powder

- 1/2 teaspoon of baking soda

- 1/4 teaspoon of salt

- 1/2 cup of unsalted butter, at room temperature

- 1/2 cup of granulated sugar

- 1 large egg

- 1/2 cup of sour cream

- 1/2 teaspoon of vanilla extract

- 4 ounces of cream cheese, at room temperature

- 1/2 cup of cranberry sauce


Instructions:

1. Preheat your oven to 350°F.


2. Grease a 9x5 inch loaf pan with cooking spray.


3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.


4. In a large bowl, cream together the butter and sugar until light and fluffy.


5. Add the egg to the bowl and mix until well combined.


6. Add the sour cream and vanilla extract to the bowl and mix until well combined.


7. Add the dry ingredients to the bowl and mix until just combined.


8. In a separate bowl, beat the cream cheese until smooth.


9. Add the cranberry sauce to the bowl with the cream cheese and mix until well combined.


10. Pour half of the batter into the prepared loaf pan.


11. Spoon the cream cheese and cranberry mixture over the batter, spreading it out evenly.


12. Pour the remaining batter over the cream cheese and cranberry mixture.


13. Bake the Cream Cheese Cranberry Loaf in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.


14. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
